The ridiculous imposition of the all-black/grey no-color ultra-low contrast UI is not a matter of aesthetics it is a matter of literally imposing visual impairment; a state of unreadability due to the indisputable fact that both CRT and LCD monitors of various brands and sizes do not and in most cases cannot render a readable UI as ideal as you have mistakenly surmised. I mean really, perpetuating this error in judgement for these past several years has gone on long enough and remains one great big WTF?
